Wednesday Weekly Recipe

Shrimp & Pasta Formaggio

What You Need
1/2 lb. angel hair pasta, uncooked
1 Tbsp. olive oil
3 cloves garlic, minced
1 can (14.5 oz.) Italian-style diced tomatoes, undrained
1 pkg. (6 oz.) baby spinach leaves
1 lb. frozen cooked cleaned (with tails left on) medium shrimp
1/2 cup whipping cream
1 cup KRAFT 2% Milk Shredded Italian* Three Cheese Blend
3 Tbsp. KRAFT Grated Parmesan Cheese

Make It
pasta as directed on package.
MEANWHILE, heat oil in large skillet on medium heat. Add garlic; cook and stir 1 min. or just until fragrant and tender. Stir in tomatoes; simmer 4 min., stirring occasionally. Add spinach; cook and stir 1 min. or just until wilted. Add shrimp and cream; cook 4 min. or until heated through, stirring occasionally.
DRAIN pasta. Add to skillet; toss to coat. Top with cheeses; cover. Remove from heat; let stand 5 min. or until shredded cheese is melted.

Leap Day

Well, here I was thinking that today was Tuesday and time for Tips, Trivia, and Tidbits. I LOST a day sick in bed! haha!

I was looking for a cute something for "Leap Day" for Tips, Tidbits, and Trivia, and came up with this... No need in wasting it!

Create a Leap Day Time Capsule
This can be done at home with the family, or as a class activity. Have your kids (or grandkids) decorate a shoebox or oatmeal container and fill it with items you gather during the last week in February.
Some ideas might include:
pictures of the family
a grocery receipt
a list of questions & answers for each child:
who are your closest friends?
what is your favorite activity this year?
what is your favorite tv show/song?
what books are you reading?
what do you think you'll be doing in 4 years?

Then pack the time capsule away somewhere and don't open it until the next Leap Day. Kids will get a kick out of seeing the old pictures and learning how much things change in four years.

I thought this was neat...and will be even better in 4 years when we open it!

Monday Morning Pick me Up

Just a reminder ...
No matter where you find yourself this morning, God is with you. No matter how deep that valley or how high the mountaintop, God is there. Take comfort in His presence and rest in His embrace. He will carry you through the valley and will celebrate with you on the mountain top.

As Kind David stated so beautifully in Psalm 139...

7Where can I go from your Spirit? Where can I flee from your presence? 8 If I go up to the heavens, you are there; if I make my bed in the depths, you are there. 9 If I rise on the wings of the dawn, if I settle on the far side of the sea, 10 even there your hand will guide me, your right hand will hold me fast. 11 If I say, “Surely the darkness will hide me and the light become night around me,” 12 even the darkness will not be dark to you; the night will shine like the day, for darkness is as light to you.

Father God,
So many times life overwhelms me. When I do not understand your plans for my life, I get frightened. Help me Lord, to trust YOU when the valley is dark. Help me to remember that in the dark times I learn to trust you more. I love you Lord and am so thankful that you are always with me.

Thursday Thoughts

This is "D-Now" weekend in our community. The event targets 6th-12th grade students and (hopefully) gives them 3 days of intense discipleship that will (hopefully) spark a fire in their hearts for Christ that will (hopefully) drive them to be lights in their homes and schools.

Note that I said "hopefully"'s not a guarantee.

Often times, we adults get really hung up on what "kids" can learn from us, but as I have prepared my heart to be a "house mom" to a bunch of girls this weekend, I have been reminded that there are also things we can learn from "kids".

For example, you get what you give. This is something I feel compelled to remind the girls of this weekend....

"You are only going to get what you are looking for from this weekend. So, what are you here for? A new boyfriend? To make your parents happy? Because the rest of your Youth Group is here? Before we go to the first Worship Rally, I want to challenge you all to stop and ask yourselves why you are here and what you are looking for."

I have no doubt that events like this have huge potential to change lives. After all, this is the same concept behind church camp, revival, youth retreats, marriage retreats...even family vacations. Getting out of your normal routine and environment and being submerged in the Gospel for a few days can potentially change your life, but you only get out of it what you put into it.

There is huge potential in Church too. People's lives have been radically changed in churches all over the world for thousands of years. People's hearts have been radically changed in mega churches with 30,000+ memberships and in one room churches with 4 in attendance. Yet, people continually say "I don't get anything out of church" or "I don't need church" or something similar. Perhaps you are one of those people. I am inclined to ask you, "What are you there for?" or "What are you looking for in church?"

If you are looking for anything other than a closer PERSONAL relationship to your Lord and Savior Jesus Christ, then you are missing the point of Church all together. While you may very well look for and find other things (friendship, a sense of belonging, peace, meaning, etc.), the ONLY thing that will radically change your life is a deep and meaningful relationship with Jesus Christ.

In Matthew 7:7 Jesus says "Seek and ye shall find."

So, What are you looking for?

Wednesday's Weekly Recipe

15 Minute Chicken Soft Tacos

What You Need
1Tbsp. oil
1lb. boneless skinless chicken breasts, cut into strips
2 cups water
1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Mild Salsa
1 pkg. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
2 cups instant white rice, uncooked
10 flour tortillas (6 inch)
3/4 cup KRAFT 2% Milk Shredded Cheddar Cheese

Make It
oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 6 min. or until cooked through.
ADD water, salsa and seasoning mix; stir. Bring to boil. Stir in rice; cover. Reduce heat to low; cook 5 min.
SPOON chicken mixture evenly onto tortillas; sprinkle with cheese. Fold up sides of tortillas to enclose filling.

Thursday Thoughts

What's On The Inside?

Last night in Ladies Bible Study, we discussed James 3 and spent a good bit of time talking about "taming the tongue"...or NOT taming the tongue. During the course of conversation, one sweet lady made the following comment, "I'll tell you what really just gets me...It's when someone talks about God blessing them and then turns around and says all sorts of ugly words." Several ladies followed with their "pet peeves" concerning others' speech. I shared that mine is someone who spends years making choices that are clearly against God's word and then says that God is putting them through a "trial".

We assume that someone who claims to be a Christian, but then speaks in a manner that goes against God's word, is a hypocrite, but perhaps this duplicity is an indication that the person speaking is in need of discipleship.

I am reminded of a story that a pastor friend told...
Pastor and church member go fishing. After a morning of discussing how terrible the world is and how good Christians should be active in church like he is, the church member snags his hand on a hook. He screams in pain and lets a long list of expletives fly. Immediately remembering that the Pastor is in the boat with him, he apologizes and is quite embarrassed.
" Oh Pastor! I am so sorry! I don't know what came over me!"
The pastor replies, "No need to apologize. If it wasn't in you, it would not have come out."

Luke says it this way....
The good man brings good things out of the good stored up in his heart, and the evil man brings evil things out of the evil stored up in his heart. For out of the overflow of his heart his mouth speaks. Luke 6:45

So, while I am sure that you, like me, will still be shocked, irritated, and embarrassed by the things that some people say, I challenge you to stop and consider the potential contained in their words. Pay attention to what people say, for out of the overflow of the heart the mouth speaks. Listen to what the heart is telling you and thank God for allowing you the opportunity to hear what that person is NOT saying...
"I am bitter"
"I am angry"
"I am insecure"
"I am judgemental"
"I am selfish"
"I do not know Jesus"

What does YOUR speech tell people?
What is overflowing from your heart?

Wednesday's Weekly Recipe

Good afternoon Ladies!
Here is a recipe I got in a recipe exchange.
Super quick and easy Cheese Ball...
Think I will make this next time we are supposed to bring finger foods to work.

Chili Cheese Ball
1 10oz Cracker Barrel Cheder
1 8oz cream cheese
1/2 tsp Cayenne Pepper1/2 tsp Garlic Salt
Chili Powder- enough to roll cheese ball to cover it.

Crate chedder and soften cream cheese
Mix the 2 cheeses add the pepper and salt.
Then roll cheese into ball , then roll ball in the Chili Powder to cover the surface

Today's tip comes from "The Preacher", aka my hubby....

Tip: Chapstick will stop a cut from bleeding.
Evidently, he cut himself shaving after he worked out and showered at the gym this morning. "I cut it pretty bad and it was bleeding and I couldn't take one of their towels," he tells me. "so I improvised!"
Bonus tip....
Dont use the cherry flavored one to stop a cut from stinks.

Thursday Thoughts

"Whew! What a day!"
I seem to be saying that a lot lately. Today I am saying it because I MEANT to get this post written last night...then this morning...then at lunch....and here we are at the end of the day.
Oh well. Some days are just like that.
There is another phrase that I have been saying lately that I like much more than "Whew! What a day!" and that is

"I just LOVE it when God shows off!"

I have been blessed to witness the immediate answer to 6 prayers in the past week! How amazing is that! I know that God answers prayers all the time and I know that often we just don't notice, but this week it has been as if God Himself elbowed me in the ribs and winked and said "Hey! Watch this!"

I will share one instance with you because it involves our Ladies Ministry and will not share any confidential info. We scheduled to have a fairly famous lady from our area speak at our Spring Fling event. We'd printed up fliers with her name on them, put something in the church mailing with her name on it, and had moved on to planning the menu and deciding on table decorations. Please understand, I can roll with the punches, but sometimes it takes me a minute to get rolling. It was a definite "punch" when a member of the ministry team called me and said "She's not coming." Something family related had come up and our speaker had backed out. I'm all about family and I understand that family comes first. I really do, but Oh my. Oh my. Oh my. I thought I was going to vomit. What will we do???? I was beside myself. An absolute wreck.

(Imagine God standing beside you....He elbows you in the ribs and winks and says "Watch this")

The next day I was emailing a friend of mine from the Cancer Institute about things totally unrelated to ministry. In closing, I invited her to our Spring Fling (the one without a speaker) and it hit me....her MOM has an AMAZING testimony!
So, I sent an e-mail to Deb and GUESS WHAT!!!!

I'll share the actual e-mail response:

Oh WOW - this is so crazy...I was praying yesterday for God to open a door to use me to show His glory. I don't feel worthy to do this, but I'm always willing to share His love and how He's walked me through so many trials. I'd be honored to do this...let me know the window of time so I can pray and ask God to prepare me, even now. Think about you all the reading your inspirational, my friend are a blessing to me as well.
Love you the world!

I almost giggle every time I read it.
God is so Good. He had a plan and a purpose all along. (as always)
He answered Deb's heart felt plea to share what He has done in her life and my desperate cry for help all at once.

We do indeed serve an awesome, amazing, loving God.

Wednesday's Week;y Recipe

Tuscan Chicken Simmer

What You Need
4 small boneless skinless chicken breast halves (1 lb.)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/4 cup water
1/4 cup pesto
2 cups grape or cherry tomatoes
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend

Make It
large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cover. Cook 5 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
ADD next 4 ingredients to skillet. Cook, uncovered, on medium heat 2 min. or until heated through, stirring occasionally.
RETURN chicken to skillet. Cook and stir 1 min. or until chicken is coated and heated through. Sprinkle with shredded cheese.
